Alright, the "no kitchen" saga continues. It is VERY challenging. I am trying my best to keep up, but having busy days and no oven can really get in the way of business! However, I love writing on this blog because it does so many good things for me mentally. I also love creating recipes, because when I am cooking, I am in my happy place!
However, finding balance has been really important to me lately. I find it very stressful coming home from work and trying to cook in my "laundry room kitchen" with construction workers entering in and out. My anxiety heightens, and I just want to crawl back to my room. I wish I could explain why I get so anxious in this type of situation!
I have slowly been trying to step back and find balance in my current situation. Whether it is getting out of the house for the afternoon, or doing most of my cooking and creating at night when the house is quiet, I mentally feel so much better by making these little changes. Balance is really important to me because my mind feels at ease. I like to look at ways I can find balance in many aspects of my life so I rarely feel overwhelmed or off!
So, I think for now, the majority of my posts will be focused on raw recipes. I'm not complaining though, because some of these taste even better than baked goods!
For instance, these raw vegan cookie dough bites will have you wondering why you ever ate cookie dough with raw eggs in it! SO gross!
These raw vegan cookie dough bites on the other hand, SO good! They take less than 10 minutes to make and you can eat them on the spot (very easy to eat them all in one sitting) or stick them in the freezer to plop in your mouth as a sweet treat, on top of smoothies, pre workout, or whenever! Ugh, just writing about them makes me want to run to the freezer and finish off the ones I have stored!
My preferred combination is these cookie dough bites on top of this dark chocolate and cherry smoothie. It sounds like dessert, but it's plenty nutritious for breakfast! But, lets be real, it certainly tastes like it could be dessert. How awesome is that! it's cherry season and the red ones at the market are all too tempting. So, blend them up, top with some cookie dough bites, and have breakfast in less than 15 minutes!
Smoothie: 5 minutes
Cookie Dough Bites: 10 minutes
Smoothie: Serves 2
Cookie Dough Bites: About 28 small balls
Cookie Dough Bites
1 c Cashews
1 c Gluten free oats
1 tbs Ground flax (optional)
1/8 tsp Salt
1/2 tsp Vanilla
1/4 c Maple Syrup
2 tbs Almond milk
1/4 c Dark chocolate chips
In a food processor or high speed blender, pulse the cashews and gluten free oats until fully processed and mealy. Add in the ground flax (if using), salt, and vanilla and pulse until fully combined. Next, add the maple syrup and almond milk. The dough should begin spinning into a ball. Once fully combined, add in the chocolate chips and pulse for 2-3 seconds, so the they are just mixed throughout the dough, but not chopped. Roll the dough into 1/2 inch balls. Put on a plate or in a plastic container, and store in the freezer.
Dark Chocolate Cherry Smoothie
3/4 c Red pitted cherries
2 tbs Unsweetened cocoa powder
1 tsp Vanilla extract
3 tbs Almond butter
1/2 c Dairy free (or greek) plain yogurt
1 tbs Chia seeds
1/4 c Unsweetened Almond milk
2 scoops Collagen Peptides (optional)
In a blender, combine all ingredients. Blend until fully combined and creamy. Pour into glasses and enjoy with Raw Vegan Cookie Dough Bites, or alone!
