Tropical Pineapple Salsa

Happy almost Cinco De Mayo! Although some of us may not be celebrating how we normally would tomorrow (perhaps with friends and more than a few margaritas), we can still appreciate the holiday through delicious, festive food.

In the past, my plans for Cinco De Mayo have usually entailed an, "oh yeah, today is Cinco De Mayo," then maybe feeling obligated to grab a margarita or indulge in authentic Mexican food. But for some reason, this year feels like I'm missing out on something that actually, no one is partaking in. I know it sounds odd, but maybe it's the whole "you always want what you can't have" sort of thing.

Anyways, I decided to share this Tropical Pineapple Salsa recipe for two reasons: First, It's the perfect salsa to pair with your Cinco De Mayo feast and impress your family, or whoever you're quarantining with. Second, since we're all not traveling right now, why not eat something that immediately takes you on a dreamy tropical vacation?

Close your eyes and this Tropical Pineapple Salsa takes you to the dreamiest beach vacation you can imagine. It's the refreshing burst of pineapple and the spicy jalapenos that mentally brings me to the beach in Tulum, a trip I took a few years back, when the only worry in the world was which taco stand I would visit next. Simpler times, huh?

Whatever your plans are tomorrow, try not to dwell on how things aren't the same this year. Instead, treat yourself to a mindful "getaway" with great food and company.

This Tropical Pineapple Salsa is just as delicious on its own or with tortilla chips, as it is doused on your favorite taco, burrito, or enchilada. Depending on your spice preferences, feel free to up the amount of jalapeno (this recipe is on the milder side). If you try it out, please let me know which dreamy "vacation" you go on! Tropical Pineapple Salsa

Yields: About 2 cups

Time: 15 minutes


2 cups diced ripe pineapple

1/3 cup finely chopped red onion

1/4 cup finely chopped bell pepper

1/4 cup finely chopped cilantro

2 tbs finely chopped jalapeno

3 tbs lime juice

Salt and pepper to taste


1.) Add all ingredients to a large mixing bowl and stir to combine. Season with salt and pepper to taste.

2.) Serve with your favorite tortilla chips or on top of burritos, tacos, quesadillas, enchiladas, etc.

3.) If you do not use it right away, store the salsa in an airtight container in the fridge for up to one week.
