Paleo Lemon Chia Seed Waffles



I'm going to start off with perhaps, a conflicting statement - I'm not a big fan of waffles for breakfast! I usually prefer something lighter and more refreshing, like smoothies or chia seed pudding. However, because these Paleo Lemon Chia Seed Waffles are sooo light, fluffy, and bright tasting, they are a complete exception.


It's not spring time without craving all the light and bright flavors (hence, my Bakery Style Blueberry Muffins and my Mint Pea Falafel with Roasted Carrots and Parsley "Feta" Salad). Something about the warm weather makes all the fruity breakfasts and desserts appealing (which is odd, because I'm usually only about the peanut butter and chocolate combo). These Paleo Lemon Chia Seed Waffles are the perfect introduction into spring time flavors. Additionally, the texture is so pillowy, it's like eating a cloud.



In place of milk, these Paleo Lemon Chia Seed Waffles are made with Vanilla Bean ICONIC Protein. I absolutely love using this flavor of ICONIC Protein in my baked goods and smoothies because it adds the perfect subtle hint of vanilla, while also making them more nutritionally balanced. All ICONIC Protein drinks are made with premium grass-fed protein and contain only 3g sugar, with no artificial sweeteners. If you don't have any on hand, don't worry, any milk or non-dairy milk will do!



In lieu of Mother's Day tomorrow, and since we won't be dining out this year, these are the perfect brunch item to treat mom to. These Paleo Lemon Chia Seed Waffles are incredibly easy to make, require minimal ingredients, and are sure to please. Don't have a waffle iron? No problem - the batter can easily be turned into pancakes!

Paleo Lemon Chia Seed Waffles


Makes: 2 large or 8 small waffles

Time: 15 minutes


Ingredients:

4 eggs

1 cup ICONIC Vanilla Bean protein drink (or regular milk)

1 tsp vanilla extract

1 tbs chia seeds

1 tbs lemon zest

1 cup coconut flour

1 tsp baking powder



Instructions:


1.) Start by heating your waffle iron and greasing it with non-stick spray.


2.) In a medium sized bowl whisk together the eggs with the ICONIC Vanilla Bean protein drink or any other kind of milk. Add the vanilla extract, chia seeds, and lemon zest and whisk to combine. Next, stir in the coconut flour and baking powder and stir until the batter is fully mixed together.


3.) Pour the batter evenly into your greased waffle iron. If you have a waffle iron that rotates, cook for about 30 seconds to 1 minute on each side. When the waffles are slightly golden on top, remove from the iron using a spatula. Top with your desired toppings and enjoy!
