Carrot Top and Basil Pesto Pasta



As you can probably tell from my various recipes (like this Thick + Creamy Avocado Pistachio Avocado Pesto or this Sun Dried Tomato Pesto Pasta with Kale), I clearly have a thing for pesto. It's amazing what happens when you throw a variety of herbs, oil, and seasonings into a food processor and watch it do its magic. However, until recently I had never tried adding carrot tops into my pesto. Resulting from my experimentation, this Carrot Top and Basil Pesto Pasta came out truly magnificent!


A few great things about carrot tops:

  • You get a bang for your buck when buying a bunch of carrots (reminder to let the cashier know to keep the carrot tops on upon checkout)

  • Carrot tops contain an impressive amount of nutrients including Vitamin A, fiber, and iron

  • The slight bitterness pairs perfectly with sweeter herbs, like basil and milder flavors, like from olive oil. AKA this Carrot top and Basil Pesto Pasta recipe.



This Carrot Top and Basil Pesto Pasta is frankly one of my favorite pestos to date. The combination of herbs and the deliciously garlic-y and "cheesy" flavor from the nutritional yeast pair perfectly with your favorite pasta. Since pasta is also my favorite food group, this recipe is a win win in my book. I love using a chickpea based pasta, such as this one from Banza because it packs extra fiber and protein. It's also a great alternative if you are gluten intolerant.


Aside from being flavorful and delicious, this Carrot Top and Basil Pesto Pasta recipe is a great way to get your greens in without even really knowing it (disclaimer: you may be glowing post-consumption)! Not only does this recipe pair perfectly with pasta, but it would also serve as a great pizza sauce, sandwich spread, or for sauteeing with some veggies.




If you're looking for a super simple, ready in under 30 minutes meal, this is the one for you. It took me a total of 20 minutes from start to finish (including boiling the pasta water and cooking!). I really hope you enjoy this crowd pleasing meal!


Carrot Top and Basil Pesto Pasta


Time: 20 minutes

Serves: 4


Ingredients:

8 oz chickpea or regular pasta

1 1/2 cups packed carrot tops (stems removed)

1 cup packed basil

2 minced garlic cloves

1/3 cup slivered almonds

1/3 cup olive oil

1/4 cup plus 1 tbs nutritional yeast

1 tbs lemon juice

1/4 tsp sea salt

ground pepper to taste

1/2 cup sliced cherry tomatoes (optional)


Instructions:


1.) Start by making pasta according to box instructions. After the pasta is finished cooking, drain the water, rinse, and set aside.


2.) To make the pesto, combine all ingredients into a food processor and pulse until thoroughly combined. The result should be pasty and mostly smooth, with a bit of texture. Season accordingly, adding more salt or pepper.


3.) In a large bowl, stir the pesto to thoroughly coat the pasta, then add the cherry tomatoes on top. Serve and enjoy!
