Pistachio Coconut & Oat Bars

Bake, eat, sleep, repeat. I think we can agree it feels a bit like Groundhog Day. If someone told me it were Saturday on a Thursday, or 5pm at 8am, I don’t think I would question it for a second.

We’re all dealing with our “new normal” differently, but one pass time I love seeing, especially through social media, is how many people are turning to their kitchens! Blame it on stress or boredom, but the creative expression is truly amazing. Cooking and baking has always been a great release for me. It gives me time to step away from the day, just be with myself, and let the creative juices run with no deadlines or big expectations. The result is something spectacular created by you. You made something delicious. You did that.

I think myself, much like many others right now, are leveraging the extra time and ability to create (hence, the empty shelves in the grocery baking isles). However, from spending more time in the kitchen and making a few extra trips to the refrigerator throughout the day, snacking has become a bit, well, mindless.

I created these Pistachio Coconut & Oat Bars because I wanted something delicious and rich in protein and healthy fats to curb my snacky tendencies and keep me full between meals. You'll drool over the crumbly, chewy texture and the sweet, salty, and rich pistachio flavor. As we emerge into Spring, these are the bars that should be taken to eat with friends on a sunny day in the park (of course, not right now - quarantine may have me dreaming...).

I love eating them warm out of the over, or for a more indulgent treat, even drizzled with a touch of maple syrup or nut butter. If you need that extra "umph" in the morning to conquer another day of "who knows what," by all means, these make a fantastic breakfast treat.

As strange as this time is, I’m thankful for my health, family, and ability to cultivate creativity in the kitchen. I'm relying on mindful activities, such as long walks, yoga, and of course lots of cooking and baking. So here’s to one more loaf of banana bread, batch of cookies, weekday pizza night, or Pistachio Coconut & Oat Bars! It's all about making the most of the time we don’t "normally" have. Because what is "normal" anymore?

Pistachio Coconut & Oat Bars

Time: 20 minutes

Yield: Around 10 bars


1/2 c pistachios

1/2 c coconut shreds

1 c oats

1/4 c hemp seeds

1/4 c maple syrup

1/4 tsp sea salt

1 tsp vanilla extract


1.) Begin by preheating your oven to 350 F and line a bread pan with parchment paper.

2.) In a food processor, add the pistachios, coconut shreds, oats, and hemp seeds and pulse to combine.

3.) Add the maple syrup, sea salt, and vanilla extract and pulse until the mixture forms into a doughy ball.

4.) Transfer mixture into the lined bread pan and press it down until the dough covers the entire pan.

5.) Bake for 10 minutes at 350F. When finished baking, remove from the oven, let cool, and slice into 10 square bars. Enjoy!
