Flavorful Chickpea Scramble
Yes you guessed it… chickpeas might just be my favorite food staple (okay, maybe besides sweet potato). What’s not to love about their versatility, texture, and nutrient density? Winner in my book! And do you know what’s even better about chickpeas? They make for a mean meal in less than 15 minutes when paired with fragrant spices, flavorful veggies and a healthy fat like avocado. Which is why this Flavorful Chickpea Scramble needs to happen…ASAP!
As I mentioned, the nutrient density in a chickpea is immense. They are high in fiber (2 cups provide the entire Daily Value which is 25g according to the FDA), full of plant protein and antioxidants, contain relatively low calories for their nutrient density, and are known to aid in digestive support, decreased cardiovascular risk, blood sugar…might I say, the list goes on?!
Also as I mentioned, chickpeas are exceptionally versatile. I use them in about everything (yes, I’ve even made chickpea blondies, cookie dough, Savory Chickpea Pancakes, etc.). and they are all delicious!). But, if you’re looking to simply swap eggs for plant protein and/or just want a savory meal, this Flavorful Chickpea Scramble will be your go to! The texture of the scrambled, warm, and slightly crispy chickpeas paired with zesty tomato, crunchy celery, aromatic leaks and a healthy dash of cumin and garlic certainly have my mouth watering.
As I head into my last semester as a busy college student, I actively seek out easy meals with simple ingredients. It’s hard not to get a little giddy inside when I come across a simple exquisite meal that comes together in a matter of minutes and makes for a perfect breakfast, lunch, or dinner. Yields: 2-3 servings Time: 15 minutes
1 tbs Olive oil 1 can Drained and rinsed chickpeas
1/4 c Chopped Celery
1 Sliced leek 1/4 c Chopped cherry tomatoes 1/4 tsp Salt 3/4 tsp Cumin 1/4 tsp Garlic powder 1/2 Avocado sliced Hot sauce of choice (optional)
Begin by adding the olive oil to a large skillet over medium heat and add the drained and rinsed chickpeas. Next use a “masher” cooking tool (something like the one pictured above) to smash the chickpeas. You can smash them as much as you like, but I prefer a few left whole for texture. Sauté the chickpea mash for 2-3 minutes or until slightly golden. Next add in the celery, leeks, tomatoes, salt, cumin and garlic powder. Scramble for another 3-4 minutes, until the leeks are fragrant. You can taste and adjust seasonings to your liking. Serve into bowl and top with avocado and hot sauce (optional).
